Fennel (Foeniculum vulgare) – Hardy Perennial Herb (Set of 3 or 6)

Herb fennel is a tall, feathery perennial grown for its aniseed flavour and its flat yellow summer flower heads.

Every part of it earns its place. The fine fronds go into salads, sauces and anything with fish, and the seeds dry for bread and spice mixes. Left to flower, the plant reaches around a metre and a half and throws up broad flat heads of tiny yellow flowers that bees and hoverflies work steadily through July and August, which is why it is worth a place in a border as well as a herb bed.

Give it a sunny, sheltered spot in fertile, well-drained soil. It is fully hardy and dies back to the crown each winter, coming up again every spring. It seeds itself very freely, so cut the heads off as they fade unless you want fennel seedlings everywhere. Cut old stems down in autumn. Keep it away from dill, which it will cross with.
