Lemon Variegated Thyme carries bright gold-edged leaves and a clean citrus scent that plain garden thyme does not have.

It makes a low, mounded to spreading evergreen that stays attractive right through the year, and it releases its scent the moment anyone touches or brushes past it. Pink flowers open in early summer and the bees arrive with them. The gold edging holds its colour best in full sun, which is also where the flavour is strongest, so this is not a herb to tuck into a shaded corner.

Use the leaves fresh or dried wherever you would use thyme, particularly with fish and chicken where the lemon note earns its keep. Grow it in full sun in light, free-draining soil, in a border front, along an edge, in a gravel bed or in a pot. Once established it is drought tolerant and low maintenance, needing only a light trim after flowering to keep it from going woody. Winter wet is the one thing it will not tolerate. Each plant is supplied as an established 1 litre root ball grown in peat-free compost.
